  1. Pre-heat oven to 400 degrees and begin making chipotle crema.
  2. Mix sour cream, 2 tbsp. lime juice, 1 tsp. zest, garlic powder, and 1/2 tsp salt. Mix well and keep cool until serving time.
  3. Prep sweet potatoes by washing, peeling, and dicing.
  4. On a baking sheet, add sweet potatoes and coat with olive oil, salt, pepper, paprika, and any other preferred spices. Bake for 30 minutes.
  5. While potatoes bake, heat oil in medium sized pan and add ground turkey. Season with garlic powder, cumin, and paprika.
  6. Slowly add in green bell pepper, black beans, corn, and diced tomato. Cook until ingredients are well combined, tender and fragrant.
  7. When sweet potatoes are finished cooking, serve with 1/2 cup ground turkey, drizzle with chipotle lime crema, top with green onion, and serve with dinner roll, toast, or tortillas.
