Line baking dish with 1/4 stick of the butter. Wash and peel potatoes. Slice into 1/4 inch rings and put in baking dish. Adding salt and pepper to taste.
In medium sized sauce pan melt the rest of the butter and add flour. Mix with whisk.
Next add heavy cream and bring to a simmer. Turn off heat. Add cheese and whisk for about a minute until cheese is melted.
Add cheese sauce over potatoes, cover with foil and bake for about 70 – 80 minutes.
While potatoes bake, cut chicken into bite sized pieces, season with salt and pepper and any other spices you might like.
Fry chicken in oil until all pink is gone. Set aside.
In a pan drizzle with oil and add green beans. Steam for about 15 minutes or until desired softness. Add salt and pepper to taste.
When potatoes are finished plate with chicken and green beans. Serve hot and enjoy!
