Pesto Chicken Panini

- 1 Lb. chicken breast
- 1 Loaf French bread
- 1 Jar Pesto
- 8 Slices Mozzarella Cheese
- basil
- 2 roma tomatoes Sliced
- olive oil
- Salt & Pepper to taste

Instructions
- Preheat oven to 350 degrees and begin preparing chicken.
- Cut chicken into slices and drizzle with olive oil and salt and pepper. Mix well and bake for 30 minutes, making sure all pink is gone.
- While chicken is baking slice tomatoes and ready your cheese, basil leaves and pesto for paninis.
- Preheat panini press.
- Slice french bread loaf into four sections and split open on side.
- Lather bread with pesto, add cheese, basil and tomatoes. When chicken is done add a slice to the center of the sandwich and put in panini press for about two minutes or until golden brown.
- Serve while warm, Enjoy!
