Mixin’ It Up

- 2 cups Basmati rice
- 4 slices thick cut bacon
- 16 oz Arugula
- 1 granny smith apple sliced
- 1/2 cup waluts toasted
- 1/2 cup dried cranberries
- 6 oz feta cheese
- 1 lemon
- 1 rotisserie chiceken

Instructions
- Add rice to rice cooker, set and forget it.
- Toast or bake bacon until crispy. Then chop when cooled.
- Peel and slice the apple. Using the lemon and its juice, coat the slices of apple, this prevents it from browning and adds a brightness to the flavor.
- Toss together in a small bowl, a serving of rice and a serving of salad with your preferred dressing.
- Shred chicken and top the salad.
- Garnish with cranberries, walnuts, bacon and feta.
