Como` loco` Lomo!

Ingredients
- 1 lb sirloin steak cut into thin slices
- 3 tbsp vegetable oil
- 1 medium red onion
- 3 plum tomato cut into thick slices
- 3 tbsp soy sauce
- 3 tbsp red wine vinegar
- 1/2 cup beef stock
- 2 tsp cumin
- 1/2 cup cilantro coarsley chopped
- 2 cups french fries frozen
- 1/2 head iceberg lettuce
- 1/2 cup mayonnaise
- 1/4 lemon juiced
- 1/4 tsp salt

- Preheat oven according to directions on bag of french fries.
- Season the beef strips with salt and pepper.
- Place a pan over high heat. Place fries in oven.
- In medium mixing bowl, whisk together soy sauce, vinegar, beef stock and cumin. Set aside.
- Add oil to pan, and with high heat cook the brown the beef strips on each side. Approximately cooking for two minutes on each side.
- Remove beef and add onions. Cook for about two minutes.
- Then add tomatoes and cook for another minute.
- Stir in previously made soy sauce mixture.
- Turn off heat and add fries. Mix until combined and fries are coated. It is okay if some fries break.
- In a blender combine mayonnaise, lemon juice, iceberg lettuce, cilantro and salt. Let sit in the fridge.
- Roughly chop 1/2 head of lettuce.
- Serve beef on top pf fries, with side salad of iceberg lettuce and rice. Drizzle some of the previously made Aji sauce over beef and serve.
