Loaded Sweet Potato with Chipotle Lime Crema

Ingredients
- 3 large sweet potatoes
- 1 lb ground turkey
- 2 diced tomatoes
- 2 cans black beans rinsed
- 1 large bell pepper diced
- 1 can corn
- 2 medium limes for zest and juice
- 1 8 oz. sour cream
- 3 stalks green onion
- garlic powder
- salt
- pepper
- cumin
- paprika

Instructions
- Pre-heat oven to 400 degrees and begin making chipotle crema.
- Mix sour cream, 2 tbsp. lime juice, 1 tsp. zest, garlic powder, and 1/2 tsp salt. Mix well and keep cool until serving time.
- Prep sweet potatoes by washing, peeling, and dicing.
- On a baking sheet, add sweet potatoes and coat with olive oil, salt, pepper, paprika, and any other preferred spices. Bake for 30 minutes.
- While potatoes bake, heat oil in medium sized pan and add ground turkey. Season with garlic powder, cumin, and paprika.
- Slowly add in green bell pepper, black beans, corn, and diced tomato. Cook until ingredients are well combined, tender and fragrant.
- When sweet potatoes are finished cooking, serve with 1/2 cup ground turkey, drizzle with chipotle lime crema, top with green onion, and serve with dinner roll, toast, or tortillas.
