Prepare cinnamon filling first. In a medium bowl, mix melted butter, brown sugar and cinnamon. Scoop filling into a small zip baggie and set it aside.
Prepare pancake batter. In a medium bowl whisk together flour, baking powder and salt. Whisk in milk, oil and the egg until all ingredients are well incorporated. A few lumps and bumps are fine.
Prepare cream cheese glaze. In a medium glass or microwavable bowl. Heat the butter and cream cheese until melted. Whisk the two together until smooth, then whisk in powdered sugar and vanilla extract. Set aside.
Baking pancakes. Heat large skillet or griddle to medium heat heat. Spray with non-stick spray. Scoop about 1/2 cup of pancake batter onto the skillet. As the pancake is cooking, snip a corner of your cinnamon filling bag, and squeeze a spiral of filling into the pancake. When bubbles begin to appear, carefully flip the pancake over using a spatula. Cook pancake until golden brown, about 1-2 minutes depending on heat.
When ready to serve, spoon warmed cream cheese glaze on top and enjoy!
