Chicken with Scalloped Potatoes & Green Beans

- 4 Large Russet Potaotes
- 2 Lbs chicken breast
- 8 Cups green beans
- 1 Stick butter
- 2 Tablespoons flour
- 2 Cups Heavy Cream
- 3 Cups cheddar cheese
- salt and pepper

Instructions
- Preheat oven to 400 degrees.
- Line baking dish with 1/4 stick of the butter. Wash and peel potatoes. Slice into 1/4 inch rings and put in baking dish. Adding salt and pepper to taste.
- In medium sized sauce pan melt the rest of the butter and add flour. Mix with whisk.
- Next add heavy cream and bring to a simmer. Turn off heat. Add cheese and whisk for about a minute until cheese is melted.
- Add cheese sauce over potatoes, cover with foil and bake for about 70 - 80 minutes.
- While potatoes bake, cut chicken into bite sized pieces, season with salt and pepper and any other spices you might like.
- Fry chicken in oil until all pink is gone. Set aside.
- In a pan drizzle with oil and add green beans. Steam for about 15 minutes or until desired softness. Add salt and pepper to taste.
- When potatoes are finished plate with chicken and green beans. Serve hot and enjoy!
