Ceviche Tostadas

Ingredients
- 1.5 lbs shrimp We used frozen, already cooked shrimp, from a bag
- 2 cups shredded carrots
- 2 whole cucumbers chopped
- 2 whole tomatoes diced
- 1 white onion diced
- 1 bundle cilantro
- sour cream
- 2-4 avocado
- 3-4 limes
- tostadas 2 per person
- mayonnaise optional

Instructions
- Thaw shrimp. Chop and add to mixing bowl.
- Chop onion, tomatoes, and cucumber. Add to shrimp in mixing bowl.
- Add shredded carrots, desired amount of cilantro, and lime juice to ingredients and mix well.
- Prepare tostadas with a layer of mayonnaise, adding desired amount of ceviche and topping it off with diced or sliced avocados and sour cream drizzle.
