Bacon Caprese Chicken on French Roll

Ingredients
- 2 Lbs chicken breast
- 2 Lbs bacon
- 6 French Rolls
- 3 Cups tomatoes Cherry or Roma
- 1-2 Lbs Mozzarella Cheese Solid form for slicing
- basil For garnish
- Balsamic Glaze For drizzle
- olive oil
- salt
- pepper
- thyme
- parsley
- Oregano

Instructions
- Begin by preheating oven to 325 degrees.
- If the chicken is breast is whole, fillet into thinner slices. Add to baking dish, drizzle with olive oil and season with salt, pepper, thyme, parsley, and oregano.
- Put chicken in oven and bake for 30 minutes making sure all pink is gone.
- While chicken is baking, cook bacon on medium-high heat. When finished, set aside.
- Next, slice mozzarella and set aside.
- Slice tomatoes, set aside.
- Once chicken is finished remove from oven and add french rolls to oven for about 4-5 minutes to warm. Use this time to set up assembly line bacon first, chicken next, tomatoes, then cheese, and basil and balsamic last.
- When bread is done cut in half to serve open faced.
- Add all components going down the assembly line, top with basil, drizzle with balsamic, serve and enjoy!
