If the chicken is breast is whole, fillet into thinner slices. Add to baking dish, drizzle with olive oil and season with salt, pepper, thyme, parsley, and oregano.
Put chicken in oven and bake for 30 minutes making sure all pink is gone.
While chicken is baking, cook bacon on medium-high heat. When finished, set aside.
Next, slice mozzarella and set aside.
Slice tomatoes, set aside.
Once chicken is finished remove from oven and add french rolls to oven for about 4-5 minutes to warm. Use this time to set up assembly line bacon first, chicken next, tomatoes, then cheese, and basil and balsamic last.
When bread is done cut in half to serve open faced.
Add all components going down the assembly line, top with basil, drizzle with balsamic, serve and enjoy!
