CUPCAKES!! WHAT!??

Don’t these cupcakes look pretty and delicious? So you may ask why are we posting about cupcakes, well the idea behind this activity was to expose our patients to a food many may look down upon. But also who doesn’t love a good ol’ cupcake, we follow the philosophy of all foods fit and we work towards emphasizing that by creating these wonderful groups incorporating more than a tasting element. We experimented with different flavors and pairings along with allowing the patients to have the space to let their creativity flow while making their cupcake masterpieces. We allowed the patients to fully be involved throughout the entire process from visiting the grocery store to chose and purchase the ingredients to baking the cupcakes.

In the pictures below we feature our three different flavored cupcakes using one batter, simply take a store bought box of cake mix or make your own; a yellow or white cake mix is preferred if you decide to create you own flavors. Next add any flavors or colors to your batter; we decided on a spring inspired lemon flavor cupcake where we added fresh squeezed lemon juice and zest. Our second flavor was our decant chocolate cupcake where we just added some cocoa powder. Our third flavor was our simple yellow cupcake to keep a neutral base for our bold toppings and decorations. We chose chocolate and vanilla frosting but the possibilities are endless; with a little bit of food coloring you can always whip up your own selection of colors or simply spread a layer of frosting and load your cupcakes with toppings! We gathered an assortment of toppings including M&M, gummy bears, crushed Oreos, a variety of sprinkles, shredded coconut, caramel sauce, and pretzels. Last but not least don’t forget to have fun with your creations!
